Roasted veg - slice, peel, chop whatever you’ve got, toss with lots of olive oil, roast at 400 F, stirring occasionally, until vegetables are tender, usually between 30-60 minutes depending on the vegetable.
Use leftovers for soups, sandwiches, pastas, dips.
